Carrot Soup
‘’Great fortifying soup: +900 Wound resistance!’’
Ingredients:
- 1 Yellow Onion, sliced

- 1 Garlic Clove, crushed
- 1 tablespoon of Olive Oil
- 5 cups of Chicken Stock
- 2 1/2 cups of Carrots, sliced
- 1/4 cup of uncooked Rice
- 1/2 teaspoon of Curry Powder or Ground Ginger
- Salt and Pepper
Instructions:
In a large cauldron, brown the onion and garlic in olive oil.
Add chicken stock, carrots and rice. Cover, bring to boil and let simmer for 20 to 25 minutes.
Add Curry or Ginger, salt and pepper. Mix well. If you think your soups is too thick, just add some water, before or after blending it.
Fill half your blender with your soup mix and reduce to puree. Repeat with the second half until your soup is smooth and creamy.
Serve hot with some cream or parsley decoration!
Easy to do and comforting during winter times, this recipe makes a great dinner for the entire family. The rice makes a delicious creamy soup without adding any milk or cream!
This recipe makes up to 4 bowls, but you can easily double it up.

I love making soups. I think it is one of the main staples I cook for my family during winter.
An easier way of pureeing the soup (and saving how much you have to wash afterward) is to get a blending wand which allows you to puree the soup right in the pot.
I use a 5 quart Dutch oven (which is basically just a good sized pot).
I have not tried a carrot soup yet. I might have to give this a go. Our favorite around here is cheddar n’ ale soup.

It is quite tasty! I should post it for you sometime. I usually serve it with “Hobbit” bread, which is REALLY caloric, but very good with this soup.

Hey, Just gotta say, I made this for my family and my fiancée last night and it was a Great hit! Even my mom, who normally doesn’t like carrots ((weird right?) Really enjoyed it. I thank you for the great recipe and look forward to trying some of your other ones
