Buttered Scone and Jam
”A tasty treat.”
- 2 cups of Flour
- 1 pinch of Salt
- 1 pinch of Sugar
- 3 tsp of Baking Powder
- ½ cup of cold Butter, chopped in dice
- The zest of 1 Lemon or Orange (or a mix of both!)
- ¾ cup of Buttermilk
Instructions:
Wisk the Flour, Salt, Sugar and Baking Powder together.
Add the Zest and Butter and mix until the butter is roughly chopped and somewhat incorporated to the flour.
Add the Buttermilk and mix again, but not too much! The result should not be an homogeneous dough, but a crumbly mixture.
Make a ball however you can and roll it on a floured surface in a disk about half an inch thick. Use a 3 inch large cookie cutter or a glass to cut your scones into round shape.
Put in the oven at 400 degrees for 15 minutes.
Serve with butter and jam, or with whipped cream and strawberries for a delicious summer shortcake!
Tips:
If you don’t have buttermilk, you can use cream and add two of three drops of lemon juice in it.
