Superior Catfish Cakes
‘’Fishing: One of the only ways a Hobbit can spend an afternoon snoozing in the sun and still get dinner.’’
Ingredients:
- 1 Chicken Egg
- 1/2 chopped Yellow Onion or 3 chopped Green Onions
- 2 tbsp of Flour
- ½ tbsp of Dijon Mustard
- ½ tsp of Thyme
- 2 tbsp and ¼ cup of Bread-crumbs
- 200g of Salmon
- 2 tbsp of Olive Oil
Instructions:
- Cook the fish. Put it in the oven or in a frying pan for 20 min or until cooked.
- In a large bowl, mix Egg, Onions, Flour, Mustard, Thyme and 2 tbsp of Bread-Crumbs.
- Add the Salmon and mix carefully, to keep some whole chunks of fish in the cakes.
- Put the rest of the Bread-crumbs in a plate. With your hands, make 4 balls of fish mixture, and roll them in the Bread-Crumbs.
- Heat the Olive Oil in a pan at medium-high, and cook your fish cakes 2 minutes each side.
- Eat when hot and crispy and serve with your favourite mayonnaise sauce!
Tips for an easier recipe:
- Instead of fresh fish, you can use canned salmon or tuna. (The original recipe does, and it’s delicious!)
- When I want to go for fresh fish, my student wallet definitely prefers when I use Trout instead of Salmon!

What do you think about substituting tuna or tilapia instead of Salmon?

Sure! Just don’t use white fish because I think the taste would be pretty boring.
